The Crunchiest Granola
DISCLAIMER: I absolutely did not create this recipe, Jenny Rosenstrach did and it was in a magazine years ago. I have been functioning from a screen shot on my phone. Please give her all the credit in the world. Here is her recipe, customize how you like but don’t deviate from certain things as listed below.
Preheat oven to 300
1 egg white, beaten
3 cups oats
1 1/2 cup of chopped nuts (any kind)
1 1/2 cup of coconut shavings (the large kind, do NOT use coconut flakes or shredded coconut, it will get sticky and burn)
1/2 cup agave or maple syrup (honey is too thick)
1/4 cup coconut or avocado oil
1/4 cup sesame seeds
2 TBSP brown sugar
1/2 tsp cinnamon
1 1/2 tsp salt
Combine ingredients, spread on a large sheet pan. Bake slowly, stirring every 10 minutes x 5 rounds.
Once finished, remove granola and allow it to COMPLETELY COOL before removing from sheet pan. Do not add mix ins (like chocolate chips, dried fruit, etc) until completely cool. Stores well for 2-3 weeks.
